In nature, it exists in three forms, namely D-malic acid, L-malic acid and its mixture DL-malic acid. White crystal or crystalline powder, strong hygroscopicity, easily soluble in water and ethanol. L-malic acid product use

【Uses】 Used in the manufacture of esters; used in complexing agents and flavoring agents. According to the provisions of my country's GB 2760-90, it can be used in all kinds of food. As a sour agent, it can be used instead of citric acid (about 80%), especially for jelly and fruit-based foods. This product has the function of maintaining the color of natural fruit, and can also be used as an extraction aid for pectin, an agent for promoting yeast growth, for formulating salt-free soy sauce and vinegar, improving the taste of pickles, and an emulsion stabilizer for margarine, mayonnaise, etc. .
